Healthy Banana Bread

“Another banana bread recipe?!” you moan. “A healthy banana bread recipe” I say. See, I was starting to feel guilty about all this baking I was doing. I mean, sure they’re pretty to look at and delicious to eat. But white flour, sugar, butter… Each bite lately was being accompanied by guilt. A change had to be made. This is how smitten kitchen’s crackly banana bread came to my rescue.

The spectacular thing about this recipe is, it doesn’t taste healthy! And I felt guilty immediately after typing that. Healthy doesn’t always mean not delicious. Sheesh. Anyway, I think what I meant to say was just that it tastes fabulous. It’s soft and sweet, although I wonder if banana bread can be anything else. The point is, it tastes soooo good but I could eat it guilty free. Which I did. Over and over. Delicious healthy bread that tastes like it belongs in the dessert isle? Yes please. Well, I’ll stop typing now and share how you can recreate such delicious happiness.

Healthy banana bread


3 large ripe bananas
1 large egg
1/3 cup olive oil
1/3 cup light brown sugar
1/3 cup maple syrup
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon table salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 1/2 cups whole meal flour
1/2 cup sunflower seeds


Preheat your oven to 350oF/ 180oC. Place bananas in a bowl and using a masher, wooden spoon or fork, mash them up till they become a liquid texture. Add olive oil and maple syrup to the bananas and mix with a wooden spoon until it’s completely combined. Mix in the sugar, egg and vanilla extract, then the spices. Sprinkle in baking soda, sunflower seeds and salt, then mix. Finally, add in the flour, mix it all till properly combined; it’s ok if there are a few lumps in the mix. Pour the mixture into a buttered loaf pan (4×8). Bake for 50 mins to an hour or until it’s golden brown on top and a toothpick/tester comes out clean when inserted. Cool on a rack, remove from the pan and serve.
