If I had a “quick dinners” category on this blog, this lovely spicy shrimp pasta stir fry would be its poster child. I was craving pasta and didn’t feel like going through the hassle of cutting, washing or prepping anything. Can anyone else relate with this feeling? No? Just me, that’s alright, this is a judgment free zone. I pretty much just wanted the meal to appear in front of me, fully prepared by the little food fairies. Obviously, that wasn’t going to happen, so I went to my freezer.
Maybe it’s just me, but I used to severly underrate the efficiency of frozen food that’s already been prepped for you. I think a part of me thought if I don’t buy it fresh and prep it myself, it’s not really healthy. But then I did research into frozen vegetables and fruits and learned that they’re actually nutritionally superior to fresh vegetables in grocery stores, when those fruits and veggies aren’t in season. Apparently the length of time it takes for vegetables to go from farm to grocery shelf can lead to a 45% decrease in nutritional value. Frozen vegetables on the other hand, are harvested and flash frozen when they are at their peak, leading to higher nutrition retention. So, no more underating frozen fruits and veggies.
Whole grain pasta, clean frozen shrimp, a bag of frozen vegetables and voila! Healthy meal that not only tastes good, but took all of 30 minutes to make, including prep time. Absolutely fabulous!
1 cup whole grain pasta, cooked and drained*
2 cups frozen vegetables (your favorite mix)
1 cup frozen shrimp, clean with tail removed
2 cups water
1 tablespoon flour
3 knorr bouillon cubes
1 tablespoon curry powder
2 teaspoons black pepper**
1 teaspoon chilli powder**
2 teaspoons chilli flakes**
1/2 teaspoon salt
2 tablespoons olive oil
Rinse and drain the vegetables. Heat olive oil in a large pan on medium heat. Add vegetables and water to the hot pan and season. Stir ocassionally and let the vegetables cook for approximately 20minutes. While the vegetables are cooking, mix flour and 3 tablespoons of water in a small cup, this will be used to thicken the sauce. After 20 minutes, add the flour mix to the sauce and stir till the sauce is thickened. Reduce heat to simmer and add pasta and shrimp to the sauce. Stir and let it cook for an additional 10 minutes.
*Feel free to use your favorite kind of pasta and make enough for 2 servings according to the package instruction. The pasta will cook a little bit more in the sauce, so you don’t want it fully cooked initially.
** Half these seasonings for a less spicy version of this dish.
