Sweet Potato Soup

Today someone told me food was the easiest way to make me happy after I told them I bought myself cupcakes and felt better after a bad day; I had never thought of it that way before, but it’s true.

After shoes, the way to my heart is food.

This soup makes me happy.

Not just cause it requires only 3 ingredients (yes I said 3), or because it takes about 20 minutes to make, but mainly because it’s absolutely superb. It’s so easy to make but tastes like a complicated dish. If you don’t like coconut milk (which makes you an alien in Tega-world) you will not like this soup.

The coconut taste is definitely the most prominent in this dish.


1 extra-large sweet potato

about 3/4 cup water

1 large red bell pepper, de-seeded & chopped

1 14-ounce can coconut milk

1/4 cup parsley

1 tsp cayenne pepper


  • Steam potatoes via preferred method (I used a steamer basket, it’s just as easy as using a microwave).
  • Transfer cooked potatoes to a blender or food processor, add the red pepper, coconut milk, and blend on high power until very smooth and creamy.
  • Taste the soup and wait five minutes before seasoning it, and if desired season to taste. [Original recipe didn’t call for any seasoning, but there’s something about being raised with pepper soup. If it’s not corn chowder (or something creamy), I like my soup spicy.]
  • Garnish with finely diced red peppers and parsley leaves.

Excuse the miniature pictures. My memory card decided it absolutely wanted to format or it wouldn’t function earlier this week. I had to get a recovery program in order to get my pictures back, I was excited for a bit till i realized enlarging my pictures made them look grainy :( Looks like I got thumbnails. Oh well. C’est La Vie.
